This two-day, in-depth workshop will teach many aspects of imu (Hawaiian underground oven) creation and use. Hands-on instruction in how to gather materials, how to create, ignite, seal, and open an imu; traditional Hawaiian names for the parts of the imu; recipes and ingredient preparations; how to place the food; monitoring and timing; and serving, including making traditional coconut leaf platters. Participants are encouraged to bring a fully thawed pan of food to be cooked in the imu, and will receive preparation assistance. Cost: $125, or $100 for current garden members.
